Unni Appam

Unni means small and Appam means rice cake is one of the famous snacks recipe in Kerala. This recipe is almost similar to Puva and Gulgule. There are many version of making this recipe, some people uses rice flour, some uses wheat flour and some uses all purpose flour, maida and so on. It taste great that you can’t just have one!

This is an easy to make recipe and is good for tea time snack. I prefer making this more often for my daughter, since it a good option for lunch box for kids. So lets check the step by step method to make Unni Appam.

Ingredients

  • Idli Rice - 1/2 cup soaked
  • Rice Flour - 1/2 cup
  • All purpose flour maida - 250 gm
  • Rava - 250 gm
  • Jaggery syrup - 250 gm or more as per the taste
  • Banana - 1 mashed
  • Cardamom - 3 powdered
  • Jeera - 1/2 tsp
  • Coconut pieces - 2 tbsp fried in ghee
  • Water - as per required
  • Ghee - to deep fry.

Method:-

1). Roast coconut in a tsp of ghee till golden brown, set aside.

2). In a pan heat jaggery with water till it is fully dissolved. Switch off and strain to remove impurities. Allow it to cool.

3). Rinse and soak rice in water for 4-5 hours.

4). Grind rice in a mixer grinder by adding little water in it . (grind it to a semi coarse batter)

5). Mix together rice flour, rava, maida, ground rice, cardamom powder, roasted coconut, jeera, banana and jaggery syrup.

6). Mix well and make into an idli – batter like consistency. Set aside for 3 – 4 hrs for fermentation.

7). Heat Ghee in a paniyaram pan and slowly pour batter into the moulds.

8). Cook on a medium flame till you see the sides getting browned, then carefully flip over to other side with the help of spoon and cook until golden brown on both sides. (to take out Unni – Appam you can also use long metal pin)

Once cooked, remove and drain on a kitchen towel and serve along with Tea.

Notes :-

  • You can also make Instant Unni Appam by only mixing rice powder, jaggery, coconut, banana or you can also add rava and maida, or only rava or only maida so on.(any variation you can do as per your wish).
  • If you want you can use coconut oil or refined oil as well.If you find the batter is runny then you can add little more rice flour to bring it to the desired consistency.
  • Soda can be added, but it is advisable if you don’t add as it is not good for health.
  • In winters it is best to keep batter for fermentation overnight. But in summer 4-5 hours is enough for fermentation.
  • If rice is soaked for long and fermented, you will get soft Unni Appams.
  • Ghee gives a nice flavor to Unni Appam, but if you want you can also add oil as per your wish.
